Thai Green Chicken Curry

Ingredients:

  • 450 Grams Whole Chicken (cut into pieces)

    • 220 Grams Potatoes (cut into chunks )

      • 100 Grams Green beans

        • 1 Tablespoon Oil

          • 1 Clove Garlic (thinly sliced)

            • 4 Teaspoon Thai green curry paste

              • 2 Cup Coconut milk

                • 2 Teaspoon Thai fish sauce

                  • 1 Teaspoon Brown sugar

                    • 1 Teaspoon Kaffir lime leaves (shredded, or lime zest)

                      • 2 Tablespoon Basil leaves (or chopped parsely)

                        • 1 Teaspoon Salt (or to taste)

                          • 1 Medium Onion (chopped)

Directions:

Step 1

Heat the oil in a large sauce pan, when oil is hot add Thai green curry paste in to the sauce pan and fry it for about 2 minutes(do not burn the paste). Now drop in garlic and onion in to the sauce pan fry it for about 3 minutes.

Step 2

Now pour coconut milk in to the sauce pan and stir gently. At the same time add fish sauce and brown sugar in to the pan and mix well all together. Cook for about 3 minutes until its bubble up.

Step 3

Then add chicken & salt in to the sauce pan stir well all together. Turn the heat down to a simmer and cook, covered, for about 15 minutes until the chicken is cooked halfway though.

Step 4

Now add potatoes in to the sauce pan let it cook for about 10 minutes, lid on. Add green beans and kaffir lime leaves in to the pan and cook all together for about further 10 minutes while stirring occasionally.

Step 5

Turn off the heat and garnish with chopped basil leaves or parsley. Serve hot with steamed rice.
