Sri Lankan Patties

 

"As locally called 'patties', is a taste filled pastry snack and a Sri Lankan delicacy. Filling can be anything from meat to fish or just vegetables which goes along with vegan & vegetarian alike. According to the filling you can choose whether you want to bake or fry these little gems, normally all the meat fillers are good for & baking others taste better with deep frying. Generally baking or frying gives the same wonderful taste."

Ingredients:

For the filling

  • 800 Grams Minced beef (or pork)

    • 400 Grams Potato (peeled, boiled and mashed)

      • 1 Teaspoon Curry powder

        • 1 Teaspoon Chilli powder

          • 5 Small Curry leaves (chopped)

            • 1 Medium Red onion (chopped)

              • 8 Clove Garlic (chopped)

                • 8 Thin slice(s) Ginger (chopped)

                  • 4 Tablespoon Butter (or oil)

                    • 1 Teaspoon Ground pepper

                      • 1 Teaspoon Salt

                        • 2 Teaspoon Soy sauce (light)

                        For the dough

                        • 4 Cup All purpose flour (sifted)

                          • 1/2 Teaspoon Salt

                            • 3 Medium Egg (1 egg for seal the edges of the patties and to brush over the patties)

                              • 4 Tablespoon Butter (at room temperature)

                                • 1 Cup Water (at room temperature)

Directions:

To Prepare The Filling

Step 1

In a large bowl mix minced beef and salt, soy sauce together. Set aside.

Step 2

Heat butter in a large sauce pan over medium high, when its hot add curry powder, curry leaves and chilli powder in to the pan, fry it for about 1 minute. (Do not burn the spice)

Step 3

Now add chopped onion, ginger and garlic in to the pan mix well all together. Let it fry about 4 minutes untill onion, garlic and ginger are getting light brown colour.

Step 4

Add minced beef in to the pan and cook for about 10 minutes. Now add ground pepper in to the pan stir well.

Step 5

Then add mashed potato in to the pan and mix well. Remove from the heat let it cool.

To Prepare The Dough

Step 6

In large mixing bowl add all purpose flour, salt, eggs & butter mix all well together until it get combined. use your hands to mix from this point onwards, add few table spoons of water to the mixture & keep mixing. Add few table spoons of water in regular intervals until the flour mixture get into ball shape.

Step 7

on a clean flat surface, fold the dough over and push down with the heel of your hand. Turn, fold dough over, and push down again. Repeat this process over and over. The dough is ready when it is smooth.
Shape the dough into a ball with your hands and place it in a bowl, cover the bowl with plastic wrap & put the bowl in to fridge for about 30 minutes.

Step 8

Take out the dough from the fridge & place it on a clean flat surface, then by using a wooden dough roller shape the dough into flat thin sheet(about 3mm). By using circle shaped biscuit cutter(about 6cm in diameter) circle & cut out the dough.

To Filling The Dough & Bake

Step 9

Take piece a of dough & put 2 teaspoons of filling at the centre of the dough, then fold the dough symmetrically half way through. Brush bit of left egg on the inside edge of the dough, before sealing them by pressing with your fingers. The next step is seal the dough edge with a fork by pressing the out side edge 1/3 way through, this gives the seal & texture to the patties. Repeat this process for all the dough pieces & place them in a large lined baking tray(with a parchment paper). Then brush all the raw patties top & bottom surface with a thin layer of egg.

Step 10

On a preheat oven (200 C) place the baking tray in the middle position & bake them for about 20 minutes. Once baked enough take them out of the oven & let them warm down for about 5 minutes before you serve with your favourite dips.


Recipe Note: Here I choose to bake the patties instead of frying as I prefer the texture & taste of baked patties, however you can also fry these little gems in a deep fryer for about 10 to 13 minutes & get the same delicious taste.
