Ingredients:

To make pad thai sauce

  • 1/4 Cup Hot water

    • 1/3 Cup Tamarind pulp or paste (from concentrate)

      • 1/4 Cup Fish sauce

        • 4 Tablespoon Palm sugar

          • 1 Tablespoon Paprika powder (or chili powder)

          To make the pad thai

          • 8 Ounces Pad thai noodles

            • 3 Tablespoon Cooking oil

              • 2 Medium Eggs

                • 1 Pounds Raw peeled shrimp (deveined)

                  • 1 Tablespoon Garlic (minced)

                      • A small bunch of chives (cut lengths)
                      • 1 Cup Bean sprouts

                        • 1 Medium Lime (cut in to wedges)

                          • 1/2 Cup Unsalted rosted peanuts (coarsely chopped)

                            • 2 Fried tofu / bean curd (cut in to thin slices)

Directions:

To make the pad thai sauce

Step 1

Mix tamarind pulp with hot water until dissolved (if you using paste, mix well with hot water) & extract tamarind juice from the mixture using a filter.

Step 2

Mix tamarind juice with palm sugar, paprika powder & fish sauce in a bowl. Then pour the mixture to a sauce pan & heatup for about 10 minutes. Make sure you simmer it until sauce get thick & when it’s done set a side.

To cook pad thai

Step 3

Put pad thai noodle in hot water for about 15 minutes until well soaked. Then drain the water & set a side.

Step 4

Heat the oil in a wok and when oil is hot add the minced garlic in to the wok, stir well.

Step 5

Add deveined shrimp in to the wok and stir well. When srimp is cooked half way through add the fried tofu pieces, pad thai noodles and pad thai sauce in to the wok and stir continuously.

Step 6

Make space in the wok by pushing the noodels to one side & add the eggs in to the wok. When eggs get cooked (turning to white colour) mix it up by stirring and wait for 15-20 seconds, and then stir eggs with the noodles.

Step 7

Add bean sprouts and chives in to the wok, stir for 1 minutes.

Step 8

Take the wok out of the heat and sprinkle some peanuts on top and serve with a lime wedge.
