Ingredients:

  • 1 1/2 Tablespoon Olive oil (or Vegetable oil)

    • 2 Kilograms Whole fresh chicken (cut into 12 pieces)

      • 2 Medium Red onions (halved, thinly sliced )

        • 6 Clove Garlic (chopped)

          • 1 Tablespoon Ginger (chopped)

            • 1/2 Teaspoon Salt (or to taste)

              • 1 Tablespoon Mustard seeds

                • 8 Medium Curry leaves (fresh)

                  • 1 Small Cinnamon stick (2 inch in length)

                    • 2 Teaspoon Ground coriander

                      • 1 Teaspoon Ground cumin

                        • 1 Teaspoon Ground turmeric

                          • 6 Small Red chillies (dried)

                            • 375 Millilitre Chicken stock

                              • 10 Medium Coriander leaves (fesh)

Directions:

Step 1

Heat the oil in a large saucepan over medium-high heat. When oil is hot add chicken pieces and fry them by turning occasionally until the chicken is light golden brown for about 10 minutes. Then transfer chicken to a plate & set aside by leaving excess oil in the saucepan for next step.

Step 2

Reduce heat to medium-low & Add onion, garlic and ginger to the same saucepan. Let them fry for about 4 minutes. When onion is soft enough and light golden brown add mustard seeds, curry leaves, cinnamon, ground coriander, cumin and turmeric to the saucepan & cook for further 3 minutes

Step 3

Then add the previously set aside fried chicken to the saucepan & increase heat to medium and add chilli, salt and chicken stock. Cook for further 10 minutes by cover and bring to a simmer.

Step 4

Reduce heat to medium-low and cook lid on for further 10 minutes or until the chicken is very tender. Then garnish with freshly chopped coriander leaves.

Step 5

Transfer the chicken curry to a large serving dish, serve hot with rice.
