Grilled Jumbo Shrimp (King Prawns) with Lemon & Chili Dip

Ingredients:

For Grilled King Prawns (Jumbo Shrimp)

  • 8 Large Jumbo Shrimp (about 500 Grams)

    • 4 Clove Garlic (finely chopped)

      • 1 Small Red Onion (finely chopped)

        • 10 Medium Fresh Parsley Leaves (chopped)

          • 2 Teaspoon Soya Sauce (light)

            • 1 Medium Lemon (cut in to wedges)

              • 1/2 Teaspoon Salt (to taste)

                • 1/2 Teaspoon Balck Pepper (coarse)

                  • 1 Tablespoon Olive Oil (or vegetable oil)

                    • 2 Teaspoon Lemon Juice (fresh)

                    For Chili Dip

                    • 2 Large Green Chili (diagonally cut in to thin slices)

                      • 2 Large Red Chili (diagonally cut in to thin slices)

                        • 2 Tablespoon Soya Sauce (light)

                          • 1 Teaspoon White Wine Vinegar (or table vinegar)

                            • 1 Teaspoon Brown Sugar (or white suagar)

                              • 1 Teaspoon Lemon Juice (fresh)

Directions:

Grilled King Prawns (Jumbo Shrimp)

Step 1

Peel the shells of the jumbo shrimps by just leaving tail with tail ring shell. Devein shrimp by cut along the center of outer edge of the shrimp by using a small knife, about 1/2cm deep. Then remove the vein if you can see them otherwise just leave it as it is. Wash the jumbo shrimp with cold water.

Step 2

In a large bowl mix chopped garlic, chopped red onion, soya sauce, salt, black pepper, lemon juice & olive oil together and mix well till combine. Then add deveined jumbo shrimp to the mixture & let it season/marinate for about 15 minutes. Make sure you not over marinate as the colour of the shrimp get changed.

Step 3

By using 4 grilling skewers (wood or metal), add 2 jumbo shrimp per skewer by piercing through the shrimp.

Step 4

Then place the grilling skewers with jumbo shrimp on a medium heat grill & grill them for about 5 minutes. Then turn the other side of the skewers & grill for further 5 minutes.

Step 5

Once grilled transfer grilling skewers with jumbo shrimp in to large platter or dish & sprinkle chopped Fresh Parsley over it. Serve hot with lemon & chili dip.

Chili Dip

Step 6

In a medium size serving bowl, mix light soya sauce, vinegar & brown sugar together. Stir well till brown sugar dissolves then add red & green chilies and mix well. Finally add fresh lemon juice to the dip mixture just before you serve.
